Innophos (Cranbury, NJ) will showcase its Levair ingredient line at the 2023 IFT FIRST Food Expo taking place in Chicago on July 16-19, 2023, at booth S2810. These ingredients can help commercial bakeries reduce food waste and extend shelf life, the firm says.
The line includes Levair Extended Shelf Life (ESL), which improves product shelf life; Levair Stabilize, which reduces waste while improving batter stability; Levair Fortify, which improves volume and texture in high-protein baked goods; Levair Classic Sodium Aluminum Phosphate (SALP), designed to achieve consistent leavening in baked goods; and Levair Select, a non-aluminum-based technology for consistent leavening.
On June 18 at the show, Innophos Vice President of Technology Karen Winkowski, PhD, will be a presenter on the IFT First Busines Stage to talk about these benefits. Meanwhile, Emma Hu, the company’s scientist for food and bakery applications, will be featured in an IFT Scientific Panel titled “What Are Creative Solutions for Addressing Food Waste Across the F&B Value Chain?” and in a prerecorded session called “Reduce Waste and Boost Sustainable Production by Improving Batter Stability.”
