Beneath new product launches such as mushroom coffee and clear protein drinks, fresh market trends and innovations point to shifts in how consumers are reaching for functional beverages and what keeps them coming back. Some recent trends include an emphasis on tangible health benefits, overcoming formulation hurdles, and a desire for experiences over ingredients. Let’s take a deeper dive into this area.

Growth Potential of Functional Beverages

The interest in functional beverages is definitely growing. Driven by multiple factors, the market is anticipated to be valued at $192.8 billion in 2026 and grow to $326.5 billion by the end of 2036, according to Future Market Insights Inc.1 Consumers are becoming more aware of the value of preventive nutrition and wellness, while simultaneously, beverage formulations are becoming more sophisticated to support health benefits claims as well as accommodate challenging ingredients. The combination enables successful, personalized innovations in beverages.

Health Benefits Driving Functional Beverage Innovation

As noted by Innova Market Insights’ Top Beverage Trends 2026: Global Market Overview report, interest in gut health is a significant driving factor in the functional beverage market, with multifunctional claims becoming a differentiator for products.2 In the global market, probiotic and postbiotic sodas have seen sharp growth and innovations, the report adds. Additionally, fermented beverages such as kombucha and tepache are increasing in popularity, meeting both clean-label and plant-based preferences of some consumers.3

With the rise of GLP-1 medications shaping nutrition intake habits, more consumers are choosing functional beverages to complement their wellness journey. “GLP-1s are quietly rewriting the brief for functional beverages; you’re not just talking weight loss anymore, you’re talking preservation of lean mass, micronutrient status, hydration, and digestive comfort,” explains Isabel Mirfakhraie, technical marketing associate at Imbibe. “We’re seeing interest in formulations that pair higher quality protein or muscle support actives with electrolytes, fiber, and gentler acid systems to better align with reduced appetite, slower gastric emptying, and GI [gastrointestinal] sensitivity in this consumer.”

Overcoming Formulation and Manufacturing Hurdles

With the emphasis on health benefits, formulating effective products is paramount. Beverages have moved beyond simple vitamin mixes toward complex bioactives like polyphenols, carotenoids, and NAD+ precursors, requiring more complex formulation methods. “You’re suddenly fighting 3 issues at once: stability in a low‑pH, oxygen‑rich beverage; low solubility or bioavailability; and a lot of extra bitterness or astringency in the cup,” Mirfakhraie explains. Solutions here include engineering the entire system surrounding the actives and utilizing flavor and taste-modulation for better delivery. Stress testing ingredients is also conducted in various conditions to establish a recommended format (ready-to-drink, stick pack, shot) and viable dosage.

The Shift Away From Artificial Colors

In May 2025, the Department of Health and Human Services and the Food and Drug Administration announced an initiative to remove petroleum-based synthetic dyes from the country’s food supply.4 The initiative has created a need for innovative solutions to overcome the resulting manufacturing challenges in using natural dyes. “The biggest challenge is that natural colorants and many cleaner sweetening systems are more sensitive—they can fade, shift hue or introduce off‑notes as they sit in a low‑pH, high‑acid beverage over time,” explains Mirfakhraie. “Natural colors are doing a lot more work in today’s functional drinks, but they’re also more prone to interacting with flavor and processing conditions, so you can’t solve for vibrancy in isolation.” A holistic solution is necessary here, she explains, using clean-label and natural maskers and modulators while also adhering to front-of-pack promises, product brightness, and shelf life.

Embracing Flavors of Comfort

As noted in our 2026 Flavors to Watch article, flavor preferences are also shifting: Nostalgic and experiential products rather than function alone are becoming more of a focus for consumers.5 Though consumers may define what is traditional and familiar differently, these flavors can provide comfort alongside function in changing times, keeping consumers satisfied. In creating these beverages, there is still room for meeting other consumer needs as well. “In nostalgia-driven functional drinks, the bar is ‘tastes like the original,’ but the rules are low sugar, low calories, and short ingredient lists,” adds Mirfakhraie.

AI and the Future

With all the new trends and consumer preferences now, what could the future of functional beverages hold? Mirfakhraie highlights how consumers are increasingly submitting their data, from wearables and laboratory results, for example, to artificial intelligence (AI) in order to be connected to beverage choices that offer the benefits they are seeking and to fit their wellness goals. AI may also be used to help simplify the science behind the ingredients into recommendations that are easy for consumers to quickly grasp, she adds.

Overall, as new trends take hold, the functional beverages landscape continues to grow as consumer needs are met with bold innovation and accessible formulations.
