New Fermentation Nutrients From Sensient Target Dairy Culture Production
Key Takeaways
- Sensient positions Amberferm Grow 288/289 as capacity-multiplying fermentation inputs amid rising demand for protein-forward, functional dairy, emphasizing efficiency gains without downstream performance trade-offs.
- Technically, both products are soluble baker’s-yeast extracts that may increase solution turbidity and are optimized for strain-specific nutritional requirements rather than a one-size-fits-all nutrient profile.
The new yeast-based nutrients, Amberferm Grow 288 and 289, are designed to raise packed cell volume yield and acidification activity in dairy culture production, without added capital investment.
Sensient Flavors & Extracts has added two yeast-based fermentation nutrients, Amberferm Grow 288 and 289, aimed at dairy culture producers.1 The aim of the new technologies, the company explained in a September 2 news release, is to increase production for manufacturers, rather than expanding physical capacity. Company representatives tied the timing to current demand pressure in the dairy category. “We want to help our customers do more with less,” stated Bhakti Pande, general manager of Sensient BioNutrients. “The new Amberferm Grow products provide a powerful solution for dairy culture manufacturers, especially in context of the current consumer demand for dairy products."
Sensient BioNutrients' product materials describe the broader market context similarly, noting that as demand grows for protein-rich, functional, and health-focused dairy products, manufacturers face increasing pressure to produce cultures efficiently without sacrificing downstream performance.2
What Are the Products, Technically?
Amberferm Grow 288 and 289 are yeast extracts, derived from high-quality baker's yeast, and formulated specifically for fermenting dairy culture strains. Both are soluble, though the company notes they produce a more turbid appearance in solution than some other nutrients. Sensient states it has tested the line against four dairy strains — Lactococcus cremoris, Lactococcus lactis, Lactobacillus bulgaricus, and Streptococcus thermophilus — and says it is open to discussing additional strains with customers.
Different bacterial strains require different nutrition, leading Sensient to develop both Amberferm Grow 288 and 289, giving manufacturers a choice depending on which strains they run. The two nutrients are already on the market in North America and Europe.
What Results Has Sensient Cited?
The company's central claim is a yield gain: Sensient states the new nutrients produced roughly twice the yield that an industry-standard fermentation nutrient delivered. Beyond raw volume, Sensient also points to a functional improvement — cultures grown with Amberferm Grow 288 and 289 showed stronger acidification activity, offering performance and competitive advantage for manufacturers, the company states. Sensient also frames the new yeast technologies as supporting manufacturers in both product optimization and development.
Gayathri Venkat, senior innovation manager at Sensient BioNutrients, said the intent went beyond a generic ingredient upgrade: “Our goal was to develop more than just another yeast extract,” Venkat explained. “We wanted to create a fermentation ingredient designed specifically around the needs of dairy culture manufacturers. This technology has the potential to help our customers optimize production without compromising product quality and performance.”
How Does This Compare to Sensient’s Other Recent Work?
The Amberferm Grow launch builds on previous ingredients positioned as efficiency tools. In mid-2025, the company's flavors business rolled out BioSymphony, a natural flavors portfolio built around what it called "complexification" — using natural flavor components to achieve a stronger sensory effect from a smaller ingredient list.3
Read together, the two launches suggest a consistent theme in Sensient's recent product strategy — pairing new formulations with a message about getting more output or performance from the resources manufacturers already have, whether the application is flavor development or dairy fermentation.
Who is Sensient BioNutrients?
Sensient BioNutrients sits within Sensient Flavors & Extracts, itself a division of Sensient Technologies Corporation, a Milwaukee, Wisconsin-based manufacturer of colors, flavors, and specialty ingredients operating in 30 countries and serving food, beverage, pharmaceutical, nutraceutical, and personal care customers.
