Recent research found that fermented cucumbers contain five short peptides with anti-hypertensive properties. These peptides are: lysine-proline, isoleucine-proline-proline, leucine-proline-proline, valine-proline-proline, and arginine-tyrosine. While they are present at low concentrations compared to other food constituents, their high potency may make them a valuable functional food component, say researchers.
