To help manufacturers deal with rising egg prices, Glanbia Nutritionals (Fitchburg, WI) is offering a flax-based egg replacement solution for baked goods. Called Optisol 3000, the product joins Glanbia’s Optisol range of functional flax ingredients.
Optisol 3000 is a proprietary combination of non-GMO flaxseed meal and whey protein concentrate. It can be used as a 1:1 replacement for dried whole eggs in applications such as cakes, muffins, pancakes, refrigerated cookie doughs, and egg rolls. Studies on muffins, corn bread, and cookies formulated with Optisol 3000 yielded comparable texture and moisture compared to control products made with dried whole eggs.
