Garlic scapes are a long, green, curled shoot that grows from the base of the hardneck garlic plant. They are edible and great for cooking with a slightly sweet, herbaceous, mild flavor. For those that grow garlic, picking the garlic scapes encourages the plant to use its energy to grow the bulb, otherwise the scapes would flower and release more seed
