CocoJiva is a new powdered coconut milk now being marketed as a signature ingredient by NP Nutra (Rancho Dominguez, CA). It is derived from fresh coconut milk and pressed from the white, fleshy meat of mature coconuts. The company says that the powder format is well suited for applications in which liquid content needs to be tightly controlled.
The company touts coconuts as a good source of iron, phosphorus, zinc, and other minerals and vitamins, as well as being a good source of protein and fiber. It also adds that the fatty acids in coconuts are medium-chain fatty acids that recent research has shown are metabolized as soon as they are consumed, instead of being converted into cholesterol and body fat-unlike long-chain fatty acids found in most vegetable oils. The company says CocoJiva is suited for gluten-free baked goods and can also be an alternative to dairy milk for the vegan and lactose-intolerant market.
