Israel-based supplier LycoRed has launched Sante, a patented natural tomato concentrate that acts as a flavor enhancer, including for salty flavors. The company says it can be used in place of artificial flavors or enhancers and can reduce the use of other ingredients, such as salt, and more-expensive flavor components.
To achieve Sante, the company says that its food scientists successfully separated and concentrated the taste-enhancing components that naturally exist in tomatoes. The company says that Sante has umami and kokumi flavor characteristics. It is available in either liquid or powder form and is heat resistant, stable at almost all pH levels, and suited for ambient, frozen, baked, cooked, and fried products.
“The good news is that, in some cases, you can save up to 10 to 20% of product cost just by replacing expensive ingredients, while at the same time reducing sodium, and enable a clean label,” states food applications manager Ehud Zach.
