Caravan Ingredients has introduced a new product for potato frying, under its Trancendim line of high diglycerides, which enables manufacturers to create products with zero trans fat. The company says that using Trancendim during potato frying can decrease saturated fatty acids, while providing the necessary structure to prevent freezer clumping and crumbling-and without affecting finished-product sensory attributes. The ingredient enables cleaner-label products by excluding palm oil and hydrogenation.
