Danisco USA has introduced its latest innovations in antifungal ingredients with Natamax B Plus and BioVia YM 10.
Natamax B Plus is a patent-pending complex of natamycin and gamma-cyclodextrin, ingredients which Danisco says are capable of three times more yeast and mold control in baked foods than pure natamycin. An added advantage is the neutral-tasting complex is its high solubility in water, which Danisco says makes for better dispersion and beverage applications.
In-house research with orange juice has found the ingredients capable of serving their function after seven weeks of shelf life. Natamax B Plus use in beverages with ascorbic acid (vitamin C) presents yet another benefit over standard antimicrobials. Other antifungals require benzene formation in this case, says Danisco.
BioVia YM 10 is a blend of cultured dextrose and plant extracts, intended to improve quality and shelf life of certain approved culinary items. Unlike other protective solutions on the market, BioVia YM 10 is said to be effective against mold, but also against difficult-to-control spoilage yeasts.
Natamax B Plus and BioVia YM 10 are part of Danisco’s Care4U protective solutions range.
