Proliant Inc. (Ankeny, IA) is promoting its Versilac dairy solids ingredient as an alternative for whey or lactose in various food systems. According to the company, whey powder and lactose prices are at record highs due to increased demand for the ingredients in whey protein, infant formula, and milk powder products.

Proliant says its ingredient can replace whey powder, lactose, and nonfat dry milk or skim milk in a wide variety of foods. Versilac has successfully replaced whey or lactose in biscuits, brownies, cheese sauce, chocolate candy, hot cocoa, ice cream, pie crust, pizza crust, ranch-flavored potato chips, ranch dip, ranch dressing, and tomato soup.

The versatile dairy alternative can even replace percentages of butter, cocoa, salt, or sugar in select products.

Proliant also notes that, considering rising corn prices, its ingredient can even substitute for dextrose, maltodextrin, or corn syrup solids in some products.
