ADM Cocoa has added a low fat cocoa powder to its deZaan product line. With just 0.5% fat, D-00-ZR powder affords formulators the opportunity to create confectionary and baked products with lower calories and saturated fat without sacrificing rich milk or dark chocolate taste and color.
Ordinary reduced-fat cocoa powders contain 10-12% fat, which can negatively impact the structural properties of baked goods. A unique production process enables D-00-ZR to retain its cocoa solids and intense flavor, making it ideal for reduced fat baked goods like delicately textured meringues and sponge cakes.
The new low fat cocoa powder option joins deZaan’s existing range of premium cocoa powders, butters, liquors and chocolates.
