IFT Preview: Flaxseed-Based Egg Replacement


Prototypes from Glanbia Nutritionals will highlight a parade of branded ingredients.

Glanbia Nutritionals has launched an innovative ingredient to replace whole eggs in bakery applications. OptiSol 3000 helps control for fluctuating egg prices. Comprising flaxseed meal and whey protein, it has as much protein as an egg, and offers cholesterol-free claims. Plus, it provides added ALA omega-3 benefits. The company says OptiSol 3000 is an easy-to-use, cost-effective alternative to eggs in cakes, muffins, pancakes, sweet bakery mixes, baked bars, egg rolls, wontons, and refrigerated cookie dough. A clean label ingredient, it can be used in a 1:1 inclusion rate for dried whole eggs, producing a firm, moist texture.

Other IFT prototypes from Glanbia Nutritionals will highlight a parade of branded ingredients. A tropical fruit smoothie stars brain-health ingredients Chromax and VitaCholine, as well as BevGrad XtraThick flaxseed, which is specifically designed to enhance the body of a beverage while delivering omega-3s and other nutrition benefits at the same time.

Further highlighting its beverage formulation expertise, the company will showcase Fatigue Fighter energy shots fortified with energy-boosting PepForm peptides. The inclusion of BevGrad chia provides a further natural form of energy, while CarniPure carnitine supports sustained energy. Both of these beverages can be manufactured at Glanbia’s recent acquisition, Aseptic Solutions USA.

The company will also demonstrate its bakery solutions, starting with delicious and playful Cake Pops. The cake pops tout GanedenBC30, a heat-stable probiotic aimed at digestive health and immunity, as well as OptiSol 3000. Plus, for additional protein fortification, the cake pops will be coated with a high-protein coating.

Speaking of protein, visitors looking for a new and convenient way to consume protein can sample Glanbia’s Protein Bites. These bites are made with a high-protein coating and a center fortified with Setria glutathione that aims to protect against oxidative stress.

Finally, continuing the healthy indulgence theme, gluten-free, high-omega-3 peanut butter and jelly flaxbread sandwiches will showcase the omega-3 benefits of the company’s fine-milled flaxseed in bread. Other ingredients include the powerful antioxidant pTeroPure pterostilbene for a functional preservative and overall health in the fruit spread, and BevGrad flaxseed for omega-3s in the peanut butter.
