D.D. Williamson’s annatto colorant has been declared USDA certified organic. Annatto, a carotenoid, is extracted from the outer coating surrounding the seeds of Bixa orellana trees. The company says that it is North America’s only supplier of certified-organic annatto extract for coloring. Applications include organic cheddar cheese, popcorn, and spreads, as well as baked goods, salad dressings, snacks, frostings, and confections. D.D.
