Parabel (Vero Beach, FL) is working on bringing a new alternative milk to market: lentil milk, made from water lentils. The company says it has reached a milestone and can produce this patent-pending milk.
In a press release, Peter Sherlock, chief technology officer for Parabel, said, “We are all elated to have achieved this breakthrough innovation. Our lentil milk is similar in color to regular milk and captures the extraordinary, high-quality protein and mineral benefits of water lentils while containing no allergens. The milk froths and foams effectively.”
Parabel remains focused on creating lentil protein and other plant protein ingredients, including concentrates, isolates, and protein flour. It says it has 94 patents around the extraction and end use of plant protein from water lentils (Lemnaceae). It received an FDA Generally Recognized as Safe letter of no objection in 2018. In general, the lentil protein can be included in beverages, snacks, and bars. The company is in the process of finalizing its second farm to increase capacity of its Lentein brand of plant protein to 3,500 metric tons per year.
