The company’s purple carrot anthocyanin extract can be used as a heat-stable natural colorant and a functional ingredient for potential benefits including antioxidant support, attenuation of symptoms of metabolic syndrome, and improved vision health. Purple carrot (Daucus carota) boasts vitamin A and beta-carotene levels equivalent to orange carrots, but with more than 1000% the phenolic content, the company says.
