Tic Gums (White Marsh, MD) shared two significant developments related to its food and beverage gum systems. First, the company introduced Add-Here 3200, a hydrocolloid system intended for reduced-sugar granola cereal and cereal clusters. Tic Gums says there are multiple avenues for bringing back sweetness in a reduced-sugar cereal, but the real challenge is replacing the binding, film-forming, textural functions of sugar. Add-Here supposedly does just that.

Tic Gums also announced its new Texture Revolution Lexicon, a vocabulary map that helps manufacturers describe exactly what they want to accomplish with gums when it comes to texture.
