Sourced from dry yellow peas, this vegetable protein provides an excellent amino acid profile and is often promoted for neutral flavor and allergen-free labeling. Prinova also introduced OvaSweet 120, a sweet flavor modification technology for use with stevia. Prinova conceived of OvaSweet 120 through a partnership with stevia supplier PureCircle (Chicago). The technology is suitable for foods and beverages made with high-purity stevia, but can also be used in formulations with sugar or high-fructose corn syrup. The sweetness modifier labels as “natural flavor” and can allow for calorie reductions as high as 40%.
