Prinova Group LLC (Carol Stream, IL) is now supplying Roquette’s (Lestrem, France) Nutralys pea protein. Sourced from dry yellow peas, this vegetable protein provides an excellent amino acid profile and is often promoted for neutral flavor and allergen-free labeling. Prinova also introduced OvaSweet 120, a sweet flavor modification technology for use with stevia. Prinova conceived of OvaSweet 120 through a partnership with stevia supplier PureCircle (Chicago). The technology is suitable for foods and beverages made with high-purity stevia, but can also be used in formulations with sugar or high-fructose corn syrup. The sweetness modifier labels as “natural flavor” and can allow for calorie reductions as high as 40%.
