As part of its Expert Answers series, flavors specialist D.D. Williamson (Louisville, KY) has posted a new video to its website explaining the challenges involved in formulating naturally derived food coloring. The video’s speaker is the company’s global food science and regulatory manager Jennifer Guild. Guild also made a presentation on the same topic at the Fi Conference “Advances in Natural Colouring,” which took place in London in February.

Among the challenges of natural coloring discussed are challenges due to differences in regional regulations. Another challenge is different regulations for GMOs, which the company says can limit the incidental additives, carriers, and stabilizers that can be used.
