The alternative plant protein is 100% soluble, transparent, and heat stable in low pH solutions. Burcon says Peazazz is also valued for its emulsifying properties. The ingredient is suitable for snacks, cereals, high-protein dieting products, sports drinks, and gluten-free, vegetarian, and vegan foods.
