EPI Ingredients, the dry ingredients division of the French dairy cooperative Laïta, has introduced an additive-free butter powder of its portfolio. Made from 100% natural milk fat, the clean-label butter powder is guaranteed to be additive-free while still being easy to incorporate into a broad range of food matrices and delivering creamy texture and mouthfeel comparable to traditional butter-based products.
The appeal of butter powder, says EPI Ingredients, is flexibility. Compared to traditional butter, butter powder is easier to incorporate into a matrix, has better dispersion and hydration, and is easier to store because of its longer shelf life and no need for refrigeration. Butter powder is typically used in pastry and baked goods, particularly premixes and mixes, says EPI Ingredients, but the butter powder has other viable applications including sauces, ready meals, dairy products, and even freeze-dried products.
“Currently, few players on the European market offer butter powder, especially in additive-free versions”, says Anne-Laure Legrand, product manager at EPI Ingredients, in a press release. “At EPI Ingredients, we have always been committed to providing high-quality solutions that meet evolving market requirements. Today, we are seeing a growing consumer demand for additive-free products. It was only natural that we should work on creating an additive-free butter powder, to meet the expectations of both manufacturers and consumers.”
