Food-tech startup ChickP Protein Ltd. (Rehovot, Israel) has introduced a chickpea protein isolate ingredient for non-dairy frozen desserts such as plant-based ice cream. According to the company, the ingredient enables frozen plant-based desserts that mimic the creamy mouthfeel of dairy desserts.
The company says that together with the Vaniglia ice cream chain headquartered in Israel, it created a prototype of a plant-based ice cream featuring the new protein isolate. In a ChickP press release, Assaf Blank, CEO of Vaniglia, stated, “As an expert in ice-cream creation, ChickP plant-based ice cream succeeded in surprising even me. It has a truly creamy and rich texture similar to dairy ice cream.”
In ice cream, the protein isolate is said to provide emulsion stability while preventing icing and crystallization, as well as providing an ideal melting profile. Maor Dahan, application manager for ChickP, added, “Our ChickP protein portfolio is highly functional and versatile and can even allow for the creation of a mascarpone-like texture in a plant-based ice cream. We were able to imitate the exact rich, uniquely creamy taste and texture of mascarpone.”
