SODA-LO salt crystals are lower in density and higher in surface area .
Tate & Lyle (London) is rewriting the salt reduction story by offering SODA-LO, a clean-tasting salt alternative that is still salt. Using a patent-pending technology, the company is able to reconfigure salt crystals so that they have greater surface area. This means that consumers can experience salty taste with less actual salt.
SODA-LO can enable 25%–50% salt reductions in a number of product applications, says the company. And it can act as a preservative and texturizing aid, too. Products tested with SODA-LO thus far include baked goods, breading and coating, and salty snacks.
