Gum Technology Corp. (Tucson, AZ) keeps expanding its Hydro-Fi line of texturizing solutions from gum and citrus fiber. At SupplySide Marketplace, the company announced that it is now marketing Hydro-Fi TC 1123, a solution that can improve the performance of both tortillas and ice creams.
With tortillas, Hydro-Fi TC 1123 encourages pliability, freeze-thaw stability, and syneresis-a benefit also demonstrated in muffins. Ice creams should see finer crystal size, creamier texture, and more aeration with this gum and citrus fiber combination.
