LycoRed (Israel) has introduced a new natural beta-carotene color, Lyc-O-Beta 1% CWS. The company says the colorant comes in powder form and instantly dissolves when mixed with water. It targets applications such as beverages, dairy, bakery, and confectionery.
In addition to providing a natural, vibrant hue, the company says that Lyc-O-Beta also provides vitamin A as well as antioxidant activity. The ingredient meets marketers’ needs as scrutiny is increasing over artificial colors.
The ingredient also offers high stability, says LycoRed. “Food and beverage manufacturers are facing significant high-stability problems when using natural colorants,” says Udi Alroy, vice president of global marketing and sales. “A key aspect of this new colorant is the high stability of Lyc-O-Beta 1% CWS, both within the powder itself and when released into the food matrix. This has been achieved by optimizing the formulation and the antioxidant system used to protect the color.” The ingredient is said to be stable to heat, light, and oxygen, as well as across a wide pH range. It produces colors ranging from vibrant yellow to orange.
