Throughout the year, Glanbia Nutritionals (Fitchburg, WI) has developed several new functional uses for flaxseed. One of those advances, a combination of whey protein and milled flaxseed for eggless baking, won the IFT 2013 Food Expo Innovation Award.

Optisol 3000 combines whey’s ability to behave like egg proteins with the binding abilities of flax. The solution has been tested in studies on egg-free muffins and corn bread, and the results are big reason for Glanbia’s winning this award.

Product concepts at Glanbia’s IFT booth revealed an even greater employment of unique ingredient solutions, some of which included a version of flax that improves the body of beverages and a PhytoForce green tea extract that is highly soluble and transparent in liquid.
