The company's CREMODAN FruitPro 10 supports even distribution of fruit chunks in water ice cream mixes.
Danisco (Copenhagen) has announced the launch of CREMODAN FruitPro 10, a stabilizer system to allow even distribution of fruit chunks in water ice cream.
Water ice is proving to be a refreshing, low-in-calories alternative to dairy-based ice cream, according to Danisco. The company says that its stabilizer system allows for easy inclusion of fruit, cereal, or vegetable pieces in water ice mixes while also providing texture and mouthfeel to the final product.
Danisco has made available a water ice concept with free-floating chunks of mango or strawberry.
