Caravan Ingredients (Lenexa, KS) is making its Ultra Fresh line of enzyme solutions suitable for sweet goods. The resulting product line, Ultra Fresh Sweet, can extend the freshness of sweet goods to 45 days and longer.
Available as a powder or paste, Ultra Fresh Sweet can improve crumb texture and reduce staling in a variety of pastries, such as yeast-raised donuts, cupcakes, sheet cakes, and muffins. The company is marketing its enzyme solution as an alternative to “simple enzymes,” gums, starches, and sugars. An original Ultra Fresh line, launched in 2012, is suitable for breads and tortillas.
