Recent research found that fermented cucumbers contain five short peptides with anti-hypertensive properties. These peptides are: lysine-proline, isoleucine-proline-proline, leucine-proline-proline, valine-proline-proline, and arginine-tyrosine. While they are present at low concentrations compared to other food constituents, their high potency may make them a valuable functional food component, say researchers.

Hard to compete with horseradish
January 10th 2025Fun fact! Horseradish can be difficult to eradicate once it’s established. This is because the smallest piece of root can grow a new plant. Additionally, the plant spreads by underground shoots that out-compete most other plants which means horseradish can become invasive if not maintained.
