Algaia S.A. (Lannilis, France) and Herbstreith & Fox KG Germany (Neuenbürg, Germany) are collaborating to provide a sustainable combination of pectin and alginates for baking applications. Algaia is a global supplier of seaweed extracts, and Herbstreith & Fox (H&F) is a global supplier of pectin from citrus and apple. The combination of pectin and alginate is synergistic, providing functionality and high stability in bakery applications such as bakery filling, bakery topping, pies, or cookies that use fruit preparations.
