Cocoa specialist Barry Callebaut Group (Chicago) rolled out two new clean-label cocoa ingredients at SupplySide West 2017. Now part of the company’s Bensdorp Clean clean-label cocoa powders line, the two new cocoa powders are alkalized with baking soda, allowing a label claim of “cocoa processed with baking soda” instead of “cocoa processed with alkali.” The company says that these cocoa ingredients are the first of their kind.
The two new ingredients are Bensdorp Clean Brown, which has subtle roasted and bitter notes for a milder cocoa flavor, and Bensdorp Clean Red, whose flavor is more intense with subtle bitter and more robust roasted notes. These powders can be used in bakery, ice cream, and beverage applications.

The new powders provide all of the traditional benefits of alkalized Bensdorp powders but with a cleaner label.”
