Blue California Commercializes Natural Fruity, Peach Flavor Gamma-Decalactone

Natural ingredient and flavor supplier Blue California (Rancho Santa Margarita, CA) has successfully commercialized a versatile, natural flavor, gamma-decalactone. Gamma-decalactone is found in many fruits and gives peaches and ripening fruits their distinctive flavor. According to the company, its innovative fermentation technology made it possible to produce the flavor using natural and wild strains of yeast in a manner that ensures that the ingredient complies with the European Union’s regulations for ingredients considered to be natural.

The company says that gamma-decalactone is used commercially in formulations of peach, apricots, and strawberry flavors used in beverages, personal care products, and even pharmaceutical products. It can also be used as a food additive to improve flavor, taste, and appearance.

“We are pleased to have reached the final phase of our commercialization of gamma-decalactone,” said Cecilia McCollum, executive vice president, Blue California, in a press release. “Our goal was to produce flavor compounds that can be confirmed natural and non-GMO. Our unique fermentation process has made this a reality.”

The company says that its manufacturing facilities maintain GMP and BRC certifications “to ensure the purity and consistent value and quality of the natural ingredients they offer to the world market.”
